Ingredients
Crust
1 3/4 cups almond flour
3 tablespoons Optimum Nutrition Double Rich Chocolate protein powder
7 tablespoons melted butter
Filling
8 ounces cream cheese
1 cup sugar-free peanut butter
1/2 cup powdered sweetener
1 1/2 cups heavy whipping cream
1 teaspoon vanilla
Miscellaneous
coconut oil, some kind of topping
Directions
Crust
1. Grease a pie pan/plate with the butter or coconut oil up from up there in the Miscellaneous section
2. Combine and mix the almond flour and protein powder
3. Pour the melted butter into the dry crust mix and…mix
4. Dump all of that into the pie plate and press into a vague crust form
5. Stick pie plate into freezer
Filling
1. In a bowl, beat together the cream cheese, peanut butter, and sweetener. It’ll be sticky and dry.
2. In a separate bowl, beat the heavy whipping cream and vanilla into a whipping cream with the traditional stiff peaks
3. Fold the whipped cream into the cream cheese, etc., mixture
4. Dump the filling into the pie plate (you’d probably want to take it out of the freezer)
5. Refrigerate a few hours or overnight before serving
Useless Information and Photos
This is another “dessert” that can be eaten as a small meal, maybe a normal bigger one if you can handle it, as it’s a little too rich. The main ingredients are cream cheese and almonds, so there’s enough fat and protein in there.
I haven’t tried using the protein powder instead of the cocoa powder for the crust, but I’m sure it would turn out fine. I use the ON Double Chocolate, which is probably the best you can get, especially at the price.
I might also try not using the sweetener for the crust; I use Stevia and for some reason it doesn’t go well with the chocolate and almond flavors. It works well for the filling.
Here are two different versions I made. The first one I used crushed keto peanut butter cups from Quest. The second one has drizzled melted butter/cocoa powder and some of the melted peanut butter. I guess it’s not really drizzled but splashed? I’ve never made any pie before (not that this is a real pie), so I don’t know anything about how to properly drizzle/dump/pour. It all comes out the same way, anyways.
Edit: For the ingredients, I took the sweetener out of the crust and recommend using chocolate protein powder instead of cocoa powder. The cocoa powder is bitter, and the sweetener (I use Stevia) doesn’t offset it in the right way. The crust is actually sweet by itself with just the almonds, butter, and protein powder.
