One of my sister’s recipes. I could just call this cauliflower salad but it doesn’t sound as fun as “fake potato.”
I used an avocado-based mayonnaise. It still has canola oil in it, but not as much as normal. There are better avocado-nnaises out there but they can get awfully expensive.
Ingredients
2 lbs of cauliflower florets (around 1 head of cauliflower)
1/2 cup of horseradish mustard
1 cup of mayonnaise
1 tsp of garlic powder
1 large red onion
2 sticks of celery
3-5 hard boiled eggs
4-8 strips of bacon
Directions
1. Hard boil the eggs and chop them.
2. Cook the bacon and crumble them (after they are cooled).
3. Steam the cauliflower in a large bowl. I microwaved them florets on high for 5 minutes with a bit of water. Slightly al dente.
4. Chop the onions, celery, and parsley. I used a food processor because they’re fun.
5. In another large bowl, add the onions, celery, parsley, mayo, mustard, garlic powder, eggs, and bacon, and mix it all up.
6. Add the cauliflower and mix again. Refrigerate, etc. Good stuff.
