Taken from this video. Be sure to use non-frozen cauliflower; I used frozen and I think it had too much water—see the wet spots on the parchment in the photo below. Still pretty good, but a fork was needed.
Ingredients
2 cups grated cauliflower
1 cup grated hard cheese (parmesan, romano)
1 egg
Directions
1. Roast the cauliflower in a skillet over medium heat to evaporate some of the moisture. Let it cool a bit.
2. Combine the egg, cheese, and cauliflower in a bowl.
3. Spread on a parchmented (new word) pan until it’s vaguely circular, about 1/4″ thick.
4. Bake at 400 degrees for 15 minutes, or until it starts to get decently brown on the edges and on the peaks.
5. Take out, add toppings, then bake for 15-20 minutes more at 400 degrees.
6. Take out (again), and let cool before inhaling.
