Recipe: Keto-Paleo Hobo Casserole

Posting some more recipes on here for the next few days. This is probably the best virtual place to keep them for me: I won’t lose them and I won’t have to patronize horribly-designed and ad-infested recipe sites.

Ingredients

  • 1 lb of grass-fed ground beef
  • 1 small onion
  • 1 cup of sliced mushrooms
  • 4 slices American cheese
  • 1 cup of crushed pork rinds
  • 1 cup heavy whipping cream
  • 1/3 cup almond flour
  • Salt and pepper

Directions

  1. Preheat your oven to 350 degrees
  2. Brown beef in skillet, drain the fat
  3. In an 8×8 glass dish layer the beef on the bottom, add salt and pepper
  4. Layer the onions, then mushrooms, add salt and pepper
  5. In a skillet, combine the cream and almond flour. Let it boil and evaporate a lot of the liquid until it becomes a cream sauce.
  6. Pour cream sauce over the cassrole
  7. Bake covered for 30 minutes
  8. Add cheese slices and crumbed pork rinds, bake for another 5 minutes
  9. Let cool for at least 30 minutes before serving
